Description

These cupcakes are totally easy to make, and in no time, you have a perfect dessert for unexpected guests.

Ingredients

  • FOR THE MUFFINS:
  • 1 cup Butter, Softened
  • ½ cups Sugar
  • 2 whole Eggs
  • 2 cups All-purpose Flour
  • 1 teaspoon Cinnamon
  • 2 whole Apples, Washed, Sliced And Chopped
  • FOR THE FROSTING:
  • 2-⅞ ounces, weight Cream Cheese
  • 2-⅛ ounces, weight Butter, Softened
  • 1 teaspoon Lemon, Rind
  • 2 cups Confectioners Sugar

Preparation

Heat the oven to 400ºF and line about 12 muffin cups with paper liners.

Blend the butter and sugar in a large bowl. Add the eggs and, in a separate bowl, mix the flour and cinnamon. Add the flour-cinnamon mixture to the butter mixture and stir the batter until smooth. In the meantime, wash, slice and chop the apples. Stir the apples into the batter and spoon the batter into the muffin pan liners. Bake them for about 25-30 minutes. Take them out and let them cool for about 10 minutes.

For the frosting, beat cheese, butter and lemon rind in a small bowl until light and fluffy. Gradually beat in sifted sugar and beat until smooth. This frosting keeps for 4-5 days if you put it in the fridge.

If you like, you can put the frosting atop the cupcakes, or you can put it in the frige. Either way, it’s really yummy.
