With oats, whole wheat flour, and dried apples as prominent ingredients, these cookies are hearty and filling without being dense or heavy. Bonus: sweet, creamy, dreamy caramel in every bite. Are you drooling yet?
Preheat oven 350ºF.
In a small bowl, combine oats, flours, baking powder, baking soda, and cinnamon.
In a medium bowl, beat butter, applesauce, and sugar. Add egg and vanilla and beat well. Beat in flour mixture until smooth. Stir in dried apple and caramel bits.
Spoon 2 tablespoonfuls of dough onto baking sheets lined with parchment paper. Bake for 8 minutes. Allow to cool for 10 minutes before removing.
