These Apple Butterscotch Cookies are perfect for Fall.
Preheat oven to 375°F. In a large bowl using a mixer with paddle attachment, cream softened butter, brown sugar and granulated sugar until fluffy. Beat in eggs and vanilla. Set aside.
In a medium bowl, mix together flour, baking soda and salt. Gradually blend this into the creamed mixture. Stir in butterscotch chips and dried apple.
Using a small spoon drop scoops of the dough onto un-greased cookie sheets, or if you prefer you can line the sheets with parchment paper or Silpat liners. Bake for 10 to 12 minutes or until golden brown.
