These cookies are PERFECT with a cup of coffee and the addition of Raisin Bran makes them a guilt-free breakfast snack (I hope).
Preheat oven to 350 degrees.
Combine butter, sugars, eggs, and vanilla. I use my stand mixer with the beater attachment.
In a large bowl, fold together remaining dry ingredients by hand.
With the mixer set to stir, slowly add the dry ingredients to the butter mixture and mix until well combined.
Drop generous tablespoonful scoops onto a baking sheet.
Bake for 10-15 minutes or until golden brown.
These cookies are excellent served with coffee and this recipe is easy to double.
Note: I call them One Cup Cookies because most ingredients are used by the cup.
