These are very much like the cookies sold at those wonderful cookie stores in malls, but way cheaper and more convenient. Except for having to buy new fat pants …
Preheat oven to 350˚F. Line cookie sheets with parchment.
Cream butter, shortening and sugar together. Add eggs and vanilla. Mix together flour, salt, baking soda, and add to sugar mixture. Stir in oats, raisins and walnuts.
Bake for 8 to 12 minutes or until just brown around the edges and the centers still look mooshy (cookies will set up upon cooling). That’s a big time range there; my first batch in the oven takes 12 minutes but subsequent batches only take 8 minutes. Just be sure to watch these carefully. Overcooking them is a sin.
