Here’s another easy-to-make cookie recipe that’s perfect for Christmas. These jam-filled cookies are completely vegan and require only four ingredients: flour, maple syrup, vegetable oil and jam.
Preheat oven to 180°C (350°F).
Combine coconut oil and cranberry-maple syrup. Add to flour and mix everything until well-combined.
Cover baking tray with baking paper. Make small balls out of the mixture and press your thumb into the center of each ball to make an indentation, but make sure you don’t go all the way down. Fill each cookie with jam. The best ways is to use a coffee spoon.
Bake for 10–12 minutes. The cookies may seem a bit soft, but they get harder and crispy when they cool down.
