Description

Walnut Kale Pesto has just seven ingredients, is done in five minutes, and is the perfect meal prep or make-ahead ingredient!

Ingredients

  • 1 cup Chopped, Toasted Walnuts
  • 3 cups Torn Kale Leaves
  • ½ cups Grated Parmesan Cheese
  • 1 clove Garlic, Peeled
  • ½ whole Lemon, Juiced
  • 1 teaspoon Kosher Salt
  • ½ cups Olive Oil

Preparation

Add all the ingredients to a food processor and combine on high for 1–2 minutes until a smooth paste forms. Taste the pesto and add more salt to your preference or a bit of olive oil if the mixture is very dry. This is a very thick pesto.

Use on pasta, grilled chicken, tossed with gnocchi, or in scoops over lentil and quinoa bowls. Yum.
