Description

On your next burger, hold the … well … everything, and try some Tomato Jam! Sweet and spicy goodness!

Ingredients

  • 1 Tablespoon Butter
  • 3 Tablespoons Minced Ginger
  • 2 cloves Garlic, Minced
  • ¼ cups Apple Cider Vinegar
  • 1 teaspoon Cinnamon
  • 3 pounds Chopped Tomatoes (heirloom, Plum Or Campari)
  • ½ cups Brown Sugar
  • ¼ teaspoons Red Pepper Flakes (add More For More Heat)
  • ½ cups Honey

Preparation

In a large pot over medium heat, melt butter and add in the ginger and garlic. Saute 1 minute.

Add in vinegar and cinnamon, reduce to a glaze (about 2 minutes). Add in tomatoes, sugar and red pepper flakes. Simmer 30 minutes or until all liquid is gone. Remove from heat and stir in honey.

Cool. Keeps well 4 days in the fridge but in my opinion it was best on day 1.

I had some on a recent cruise, served with a broiled chicken breast sandwich. Fabulous. If I used canned tomatoes, what do you think the measurement would be in cups or oz.? Thanks.
