This recipe is all about that oh-so-beautiful, jaw-tingling zing that only a fresh squeezed lemon can give!
Zest and juice lemons and set aside.
Place butter and sugar in a small mixing bowl and mix with electric mixer until well combined but not creamed. Keep mixer running and one at a time, add eggs, egg yolks, lemon zest, and lemon juice.
Once thoroughly combined, transfer mixture to a medium saucepan and place over low heat.
To prevent mixture from boiling (which will cause it to separate), stir continuously until mixture has thickened and you can draw a line in the liquid on your spatula.
Transfer mixture to a container and cover loosely with plastic wrap while it cools to prevent it from forming a skin.
