A blend of citrus zest combines with alder-smoked salt to make a subtly smoky seasoning that is great on fish and poultry.
Combine all the ingredients in a small zip-top bag and shake to combine.
Set aside for at least three hours to allow the flavors to marry.
Use as you would any other seasoning.
Tips:
A microplane is indispensable for easy zesting.
I ground the pepper and smoked salt together in an electric coffee grinder that I have set aside specifically for spice grinding.

This looks great! I wonder where I can find alder smoked salt? or any kind of smoked salt for that matter. maybe amazon.
