Don’t let it’s ugliness fool you. This sweet and salty pistachio butter is delicious with a hint of tropical coconut!
Add pistachios to a food processor and pulse until they become crumbs. Add in coconut and process until smooth. You may need to turn the food processor off and scrape down the sides a few times. Add in vanilla and maple syrup and pulse a couple of times to mix. Then add in coconut oil 1 teaspoon at a time until desired consistency is reached.
Garnish with additional coconut. Use as a dip for fruit or whatever your heart desires!
