Isn’t it the best when you can indulge in something that feels rich, creamy, and all around bad for you, but it’s not? I had a hankering for Caesar salad this week, but damn. The calories in creamy dressings are terrifying. So, I created a healthy version with my buddy, Greek Yogurt, and substituted the anchovies for capers so vegheads can also enjoy.
Place Greek yogurt, Parmesan, oil, lemon juice, thyme, garlic, mustard, capers, a pinch of salt, and some ground black pepper in a blender. Blend on low to medium-low until smooth.
Taste, and season with kosher salt and ground black pepper until it tastes good to you!
