A spicy and tasty marinade. Great for fish, meat and vegetable dishes. Used in Moroccan dishes. You can adapt this recipe to fit your taste.
1. Grind the garlic, cumin, saffron, olive oil, juice of 1 lemon, chilli pepper and salt to a fine paste in a mortar and pestle. You can also do this in a food processor.
2. Add the chopped coriander and mix well.
Use as a marinade for fish, vegetables and meat dishes.
