Description

Fennel’s slightly licorice taste blends nicely with the Caribbean Red papaya, while the kalamata olives give the relish a smoky Mediterranean kick.

Ingredients

  • 1 cup Caribbean Red Papaya, Diced
  • ½ cups Fennel Bulb, Diced
  • ¼ cups Plum Tomatoes, Seed And Diced
  • 3 Tablespoons Red Onion, Finely Diced
  • ¼ cups Kalamata Or Black Olives, Cut Into Strips
  • 1 Tablespoon Parsley, Minced
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 Tablespoons Lime Juice
  • ½ teaspoons Fresh Ground Pepper

Preparation

Combine papaya, fennel, tomatoes, onion, olives and parsley. In a separate small bowl, combine oil, lime juice and pepper and whisk well. Add to the papaya mixture, tossing gently.

Marinate in the refrigerator for 2 hours.
