Description

This marinade offers a great blend of flavors including honey, BBQ sauce, chili and lime juice. I got this recipe from some friends who in turn had gotten it from some other friends so I think that it’s one of those recipes that travels quickly simply because it´s so delicious. And it is seriously the best marinade I have ever had!

Ingredients

  • 1 whole Chili (leave Out The Chili Seeds If The Chili Is Very Hot)
  • 2  Limes
  • 1 cup BBQ Sauce With Honey (See Note)

Preparation

Chop the chili. Wash and zest half of the limes by rubbing it gently along the finest microplane surface. Be careful not to remove the bitter white pith beneath the zest.

Combine the BBQ sauce, zest, the chopped chili as well as the juice from all of the limes in a Ziploc bag.

Add your meat of choice (see note) and squeeze all of the air out of the bag. Zip it closed, and then massage the chicken with the marinade. Put bag into a dish and put it in the refrigerator.

Marinate your chicken for some time before grilling it, at least 1-2 hours ahead, preferably 4 hours. If you have time, try marinating overnight for the fullest flavour.

Notes:
1. Recipe will marinate about 1.5 pounds of chicken. We used boneless chicken thighs.
2. If you can’t find a BBQ sauce with honey, just add 4-5 tablespoons of honey to whatever sauce you have.
