Description

This white sauce is “almost alfredo” (shown here with whole wheat penne). The chicken broth really adds that flavor that is often missing from low-cal alfredo recipes.

Ingredients

  • 1 Tablespoon Olive Oil
  • 3 cloves Garlic. Pressed And Finely Minced
  • 2 cups Skim Milk
  • 1 cup Chicken Broth
  • 3 Tablespoons All-purpose Flour
  • ½ teaspoons Salt
  • ¼ teaspoons Fresh Ground Black Pepper
  • ½ cups Parmesan Cheese, Shredded Or Grated

Preparation

In a medium saucepan, heat oil over medium heat. Add garlic and saute until golden brown.

In a seperate saucepan, stir together milk, chicken broth, flour, salt and pepper over low heat until smooth and thick. Stir into garlic. Continue to cook over medium low heat, stirring frequently, until the sauce is thick. Stir in Parmesan cheese.

One serving contains only 80 calories and 4 g fat!

I just saw a recipe resembling this but they added 2 tblespns of low fat cream cheese. I may have to try it both ways. thanks for the recipe :)

Ahh! This made me really really excited! I’m always avoiding creamy pastas because of their calorie/fat content. I’ll probably even add some veggies :)

I’ve never cared for Alfredo Sauce because of how bloated it makes me feel that day after I’ve had it. This is and will be my new favorite sauce. I’ve made this at least a dozen times with everything. Poured over steamed veggies, with all different pasta combos, and even over different cuts of meat. It’s delicious and versatile!!!

I’m getting tired of my go-to alfredo recipe, and I wanted to try something new. I didn’t care for this one very much. It was really garlicy.

So so good! It was nice to have a creamy sauce and have no guilt!! My 3 year old loved it also, will make this sauce again many times!
