Leftover zucchini bread dunked in a classic French toast egg wash, and cooked through. Regular French toast just met its match.
To a bowl, add eggs, milk, cinnamon powder, and light brown sugar. Beat well.
In a large skillet over medium heat, melt about 1 tablespoon butter. Take a slice of zucchini bread (be careful, as the bread is typically soft and moist) and dunk it in the egg mixture, coating all sides. Place in the pan and cook for a few minutes on each side, until egg mixture is cooked through. Remove and repeat with remaining bread.
Serve immediately with syrup or powdered sugar.
