I love these waffles and make them all the time. I usually triple or more the recipe and stick my freezer with frozen waffles, so much better than store bought and I always have a backup breakfast.

I halved this recipe since it was just 3 of us. The hubby and my 5 year old picky little one loved them!

This recipe is outstanding! The only thing I changed was to use 1/3 cup sugar instead of just 1 Tablespoon. Then the waffles are sweet enough to be eaten plain or with just a dab of syrup.
The waffles are best straight out of the waffle iron–all crispy and light, but we have found that the cold leftovers can be reheated/recrisped in the pop-up toaster!
Please notice that the waffles are mostly prepared the night before. Makes the morning a breeze.

GREAT RECIPE! I too added more sugar (1/3 cup-ish – didn’t measure), and doubled the vanilla because I love it. These were amazing – crisp on the outside and creamy on the inside. The yeast flavor was subtle but present, mellowing to an almost malty overtone. My house still smells delicious.
If you want to truly swoon, top them with Ree’s “Maple-Butter Icing (for Pancakes)” – I modified that by browning the butter, which makes everything taste better…

I have been looking for a yeasted waffle recipe for a while. This looks so easy, it’s on this weekend’s menu for sure!

We have a local pancake house that I think uses yeast in their pancake recipe so I was just wondering if these would taste similar.

molldog – I guess I just don’t associate yeast with pancakes. I would stick to making waffles with this recipe!

I’ve been using Mark Bittman’s (How to Cook Everything) overnight yeasted waffle recipe for years. His does not include baking soda, but requires separating eggs and whipping eggs whites. This seems easier so I’m willing to try it!
Yeasted waffles are miraculous– much more delicate and crispy and better than any other waffle!
