Nicely spiced and colored waffles.
Preheat waffle iron (stovetop or electric). Mine needs about ten minutes to heat up fully.
In a medium bowl, whisk together dry ingredients.
In a large bowl, mix the pumpkin until smooth, then add milk, oil, and vanilla. Mix carefully to avoid splashing until fully combined. Add the dry ingredients in two batches, making sure no dry spots are left behind.
Cook until slightly crispy. They taste wonderful with bananas, jam, and maple syrup.
