Description

Healthy whole grain waffles with sweetened coconut and tangy orange. A perfect way to awaken your taste buds!

Ingredients

  • ½ cups Buckwheat Flour
  • ½ cups Quinoa Flour
  • ¾ cups Coconut Flour
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • ½ teaspoons Ground Ginger
  • ½ teaspoons Cinnamon
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Ground Flaxseed
  • ½ cups Sweetened Shredded Coconut
  • 1-½ Tablespoon Orange Zest
  • 1 cup Earth Balance (margarine Or Butter Would Also Work)
  • 3 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 14 ounces, fluid Unsweetened Vanilla Almond Milk
  • 8 ounces, fluid Orange Juice

Preparation

1. Preheat your waffle maker according to manufacturer’s instructions. Start by combining all of the dry ingredients in a large bowl and then sift together. (first 8 ingredients on list)
2. In a separate large bowl, combine the brown sugar, ground flax, coconut and orange zest along with all of the wet ingredients and mix well.
3. Slowly add the dry ingredients into the wet until a batter has formed and it is well combined.
4. Cook according to your waffle iron manufacturer’s instructions. Cooking time may vary according to your waffle maker. Because this recipe uses gluten free flours, the waffles are tender and you should be careful when cooking. Just make sure that you don’t try to remove them too early or they will fall apart. Remove the cooked waffle from the iron and continue to cook the remaining batter.
5. Serve warm with maple syrup and enjoy!

Makes approximately 9 waffles (using 1/3 to 1/2 cup batter for each).
