This is my favorite waffle recipe. The egg whites make them light and fluffy. So yummy!
Melt the margarine and let it cool.
In a small bowl, beat 4 egg whites till stiff with peaks and moist.
In a large bowl, beat the 4 egg yolks until creamy. Add the milk to the beaten egg yolks.
Sift or whisk the flour, baking powder, sugar and salt. Add to the milk/egg mixture. Blend on medium speed. Add melted butter to the mixture. Only beat until blended. Fold in egg whites by hand.
Cook according to your waffle iron instructions.

Certainly a light and fluffy waffle, almost like angel food cake. And the batter makes plenty of waffles. I have a family of 8 and normally double recipes that say ‘serves 8′ but this one did not need doubled. Very tasty!
