Everyone knows about waffles, but how many of us just use a Bisquick mix or even worse a “just add water and done” mix? Yes, these are super easy and quick but really it’s not that much harder to make good homemade waffles. And that way you also know exactly what’s going in them right?
In a large bowl sift together the flour, baking powder, salt and sugar. Make a well in the center of the bowl.
In a separate bowl, mix together the egg yolks, milk, vanilla and oil. Pour this into well in the flour mixture and stir well. Stir just until ingredients are moistened.
In a small bowl beat egg whites until stiff. Fold them into the batter.
Cook the batter in your waffle iron according to manufacturer’s instructions.
Makes ten 4 inch waffles.
