A tender waffle with a crisp exterior. Delicious for breakfast or as a base for fresh fruit desserts. Freezes well, too!
Heat a waffle iron and grease lightly.
Whisk eggs until fluffy in a medium mixing bowl. Add remaining ingredients and whisk together just until batter is smooth.
Pour batter into the center of the heated waffle iron as directed by the manufacturer. Bake until the iron is no longer steaming and sizzling sounds subside.
Serve immediately or hold in a 200ºF oven until ready to serve.
Makes about eight 7-inch round waffles.
Variations:
Add about 2 tablespoons of slightly crushed granola or other cereal, wheat germ or bran, or chopped nuts (even crumbled bacon!) to the top of the batter immediately after pouring it onto the hot waffle iron. Cook as directed above.
Wrap leftovers well and freeze. Reheat in a 400ºF oven on an ungreased cookie sheet until hot, about 5 minutes.

Very yummy! Easy waffle recipe. I added 2 Tb of flax seed meal for added fiber. My kids loved them!

These were delicious!! My family loved them.. I topped them with bananas, and my homemade cinnamon cream syrup ..they were gone in a flash!
