My son was released from the hospital a couple of days ago and my husband will be staying home with him for a week. I wanted to get them some quick snacks, but found the Eggos in the store to be just too expensive. I was determined to make better … and I did.
Mix the flours, baking soda, and salt in a large bowl.
In a separate bowl, mix buttermilk, yolks, and melted butter.
Pour into the flour mixture and stir to combine.
In another bowl, beat egg whites until stiff peaks are formed.
Fold the egg whites into the batter.
Add 12 drops of yellow food coloring and the sugar into the batter and stir.
Pour batter into a preheated and greased waffle iron.
Flash freeze each waffle for 20 minutes, then place in freezer bags. Use within a month.
Makes sixteen 4″ waffles.
Substitutions:
If you don’t have self-rising flour, substitute another cup of all purpose flour, 1/2 teaspoon of baking powder, 1/4 teaspon of salt.
If you don’t have buttermilk, add two tablespoons of lemon juice or vinegar to two cups of milk.
