Description

Delicious banana waffles your family will love!

Ingredients

  • 2 cups Flour
  • 1 Tablespoon Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 8 ounces, weight Butter
  • 2 whole Ripe Bananas
  • 2 whole Eggs Separated (Whites In A Big Bowl)
  • ½ cups Sour Cream
  • 1-½ cup Milk

Preparation

Preheat waffle maker.

Combine the dry ingredients in a large bowl.

Melt the butter and set aside to cool slightly.

In a medium bowl, mash the bananas well. Add the yolks, sour cream and mix well. Add the butter and the milk. Add the wet ingredients to the dry ingredients and mix well.

Whisk the egg whites in a very clean bowl with a wire whisk. (This should take 2-3 minutes of whisking. Alternatively you could use an electric mixer.) Whisk them until they form stiff peaks. Gently fold the whites into the batter until they form a fluffy batter.

Ladle the batter into the waffle maker (greased if necessary) and cook until the waffles are golden brown. Serve hot with the condiments of your choice!

So, so good. These will definitely be made many more times. I was worried about the amount of butter, but I think that may be what made these the best looking (golden brown) waffles I’ve made. My only change was using Greek yogurt instead of sour cream because it turns out the sour cream container in the fridge had leftovers in it – not sour cream!
