Sweet Potato Breakfast Hash with a medley of fresh veggies!
1. Cook bacon in a skillet over medium heat. Once bacon is crispy remove it from the pan and reserve bacon grease in pan.
2. Add the mushrooms, onion and green pepper into the pan and saute in the bacon grease over medium heat for about 5 minutes.
3. Add the sweet potatoes. Continue to cook until desired consistency is achieved. I let mine cook for about 30 minutes.
4. When bacon is cooled, crumble it. Add in garlic and cooked bacon near the end of the cooking process to avoid burning. Cook until the garlic is softened.
5. Enjoy!
