Sausage, Croissants, Eggs and Cheese. YUM!
This recipe is extremely easy, extremely tasty, and very filling. Great for on-the-go (just wrap a slice in foil and head on your way!) or a Sunday morning sit-down with the family.
It’s also very good as leftovers – just pop the leftover portion into a 375 oven for a few minutes and you’re good to go all over again!
Preheat oven to 375.
Line a cookie sheet with parchment paper.
Brown 1/2 pound to 1 pound of sausage in a frying pan on the stove. How much sausage you use is up to your personal taste. The whole pound makes for a very meaty roll! (i.e. it’s a man-pleasin’ meal)
While sausage is cooking, whisk your eggs, 1/2 cup cheese, a dash of heavy cream (if you’re like me…if you’re not, it’s OK to leave it out) and a little salt and pepper.
Once sausage is brown, pour egg mixture over top and scramble until eggs are almost “done.” Remove from heat.
Open your tube of croissants and spread them out flat over the parchment paper-lined cookie sheet. Use your fingers to close the seams and any holes that may occur.
Sprinkle the remaining 1/2 cup of cheese over your croissant sheet, then spoon the sausage/egg mixture evenly over everything.
Carefully roll the whole thing up from long end to long end, then place on center rack in oven for 6 minutes.
Remove from oven, carefully rotate roll 90 degrees until the bottom becomes the top, and bake in oven for another 6 minutes. This lets the whole thing brown nicely.
Remove from oven, cut into 1″ slices and serve with tall glasses of OJ.
