A breakfast casserole that is easy to put together and can be made the night before. I make this on Christmas Eve and pop it into the oven on Christmas morning. It bakes while everyone is opening gifts and it’s ready when we’re all done. My kids call it “Christmas Casserole” although I make it throughout the year as well.
Preheat oven to 350 degrees.
Cook sausage, onion and garlic in skillet until no longer pink.
Combine sausage, onion and garlic mixture with remaining ingredients and pour into a 9×13 glass casserole dish. (You can grease it if you want to, but it doesn’t stick much.)
Bake in a 350 degree oven for 45 mins to an hour, until a toothpick inserted into the center comes out clean.
Let rest for about 10 minutes before serving. GREAT with tortillas and salsa (or Tapatio if you like it spicy).
