Description

Creamy layers of tender scone and fresh strawberries!

Ingredients

  • 2-½ cups Flour
  • ½ cups Sugar
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 8 Tablespoons Cold Butter, Cut Into Small Pieces
  • 1  Large Egg, Beaten
  • ⅔ cups Cold Heavy Cream, Plus 1 Tablespoon For Brushing On Scones
  • 3  Large Strawberries, Thinly Sliced
  • FOR THE STRAWBERRY GLAZE:
  • 1  Strawberry, Minced
  • 2 cups Powdered Sugar
  • 1 Tablespoon Heavy Cream

Preparation

1. In the bowl of a food processor, combine the flour, sugar, salt, baking soda and baking powder.
2. Pulse in the cold butter until crumbly.
3. In a separate bowl, combine the egg and cream.
4. Pulse in the cream mixture until you have a smooth, wet dough.
5. Transfer to a floured surface and lightly form into a disc.
6. Cut the disc into wedges or cut out circles with a cookie cutter.
7. Gently slice each scone through the center with a floured knife.
8. Put a few slices of the strawberry in the center. Replace the top on the scone and lightly pinch the sides closed.
9. Brush the tablespoon of cream on the tops of the scones.
10. Bake at 400ºF for 12 minutes.
11. Take the scones out of the oven and set them aside to cool slightly while you make the strawberry glaze.
12. In a small bowl whisk together the strawberry, powdered sugar and cream until you have a smooth glaze.
13. Pour 1 tablespoon of glaze over the top of each scone. Let set up and serve warm.

Omg these were delish! I found it a bit aggravating trying to slice the scones to put the berries inside. I ended up putting them all in the fridge except the one I was working on. That helped some. I put the icing on them soon after they came out of the oven and then of course I had to sample one. They were fabulous!! I didn’t expect them to be as good the next morning, but they were still delish! Reminded me of a poptart!

These were beyond delicious. I have to say, that contrary to the review above, I loved the Strawberries in the center of these scones. They were not as dry as a traditional scone. Easy to make and a perfect breakfast treat for the weekend!

These were pretty tasty but if I make them again, I’ll use strawberry preserves inside instead of sliced strawberries. The fresh strawberries get a yucky texture when baked.
