Perfect for a spicy brunch menu!
Preheat oven to 375F.
Brown the chorizo and drain well.
Chop veggies to a smaller dice. (You can easily add more veggies.)
Combine all ingredients in a bowl until well mixed.
Spread into a 9×13 pan and cook for 45-55 min.
Serve with sour cream.
You can also use mild chorizo. This recipe doubles well.
