Description

Homemade granola with cranberries, honey and cinnamon.

Ingredients

  • 250 grams Honey
  • 3 Tablespoons Vegetable Oil
  • ½ teaspoons Vanilla Extract
  • 100 grams Almonds, Roughly Chopped
  • 60 grams Walnuts, Roughly Chopped
  • 40 grams Sunflower Seeds
  • 320 grams Oats
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Salt
  • 140 grams Dried Cranberries

Preparation

Preheat the oven to 180°C/350°F.

Take a large saucepan and heat the honey and vegetable oil slowly, until it becomes runny. Remove from heat and stir in the vanilla extract, the nuts, seeds, oats, cinnamon and salt. The cranberries are added after baking. Stir well until everything is covered in the honey mixture.

Take a large rimmed baking tray that you’ve covered with a sheet of parchment and spread out the granola mixture. Bake this in the oven for about 35 minutes, stirring every ten minutes until the granola is golden.

Remove from the oven and set aside to cool. Don’t worry if the granola isn’t crunchy yet, because that happens when the granola cools down.

After cooling, stir in the cranberries and store the granola in an airtight container. It stays fresh for about 3 weeks.

This recipe will make about 900g/4 cups of granola.
