Quinoa is the perfect breakfast grain for oatmeal haters (like me!)
Rinse the quinoa, then put the quinoa, milk, water, cinnamon, and cardamom in a small saucepan and bring to a boil. Once it comes to a boil turn the heat down, cover the pan and let it simmer for about 15 minutes, until all the liquid has been absorbed. Once the quinoa is done cooking, fluff it a little and divide it evenly between two bowls. Stir half the honey, coconut and pecans into each serving … and you’re done!

Oh boy! I can hardly wait to try this! I don’t have any almond milk so I might have to try coconut milk so I can have this for breakfast tomorrow!
