This Roasted Maple Sweet Potato Breakfast Skillet makes the most delicious dish and is filled with fresh ingredients!
Preheat oven to 400ºF. Melt butter over medium heat in two small skillets or one large skillet.
Add green and red pepper to skillet and saute until tender, about 5–6 minutes. Remove from heat.
Add sweet poatoes and bacon to peppers. Stir to combine.
Make wells in each skillet for each egg. Crack each egg into the well. Bake for 8–10 minutes, or until eggs are set.
Remove from oven. Season with salt and pepper, if desired. Serve immediately. Enjoy!
