Description

These Pumpkin Spice Waffles are crispy on the outside, tender on the inside, and filled with cozy fall flavors!

Ingredients

  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 2 teaspoons Pumpkin Pie Spice
  • ½ cups Light Brown Sugar
  • 1 can Pure Pumpkin
  • 2  Eggs, Yolks And White Separated
  • 1-¼ cup Plain Greek Yogurt
  • ¾ cups Milk (any Kind)
  • 1 teaspoon Vanilla Extract

Preparation

Preheat waffle iron according to your model’s directions.

In a large bowl, combine flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.

In a medium bowl, add brown sugar, pumpkin, egg yolks, yogurt, milk, and vanilla. Beat until combined with an electric hand mixer or stand mixer with fitted paddle attachment.

Pour pumpkin mixture into flour mixture and beat until just combined. Set aside.

In another medium bowl, beat egg whites until stiff, about 3–4 minutes. Gently fold into batter.

Lightly grease waffle iron with nonstick cooking spray, if needed. Add batter and cook until lightly golden brown and cooked through, roughly 3–4 minutes.

Serve immediately with butter and warm maple syrup, if desired. Enjoy!

These were really tasty! Loved all the pumpkin in them; I’ve made others that call for about half that amount. Thought these were better. And 2 tsp of pps?- yes please! Party in my mouth. :-)

2 things I added: about 1/3 c oil & 1/2 c chopped pecans (I’ve made enough waffles in my lifetime to know I cannot get away with no oil in the batter; it makes for easier release from the waffle grids when they’re done cooking.)
