French toast with an Autumn twist! Pumpkin and spice!
I got 8 slices of toast out of this batter. Slice your bread and let it sit on the counter while you prepare the pumpkin batter.
In a medium-sized bowl mix all ingredients EXCEPT the pumpkin, blend well and then add the pumpkin. Stir by hand until well blended.
Preheat your griddle or another shallow pan. I usually use a medium heat, and I do 2 slices at a time in my pan. Unfortunately I don’t have a griddle.
Soak each slice so that it absorbs as much of the batter as possible without getting mushy and falling apart.
Spray the hot pan with a cooking spray to keep the toast from sticking. Slam that bread in the pan and cook the bread on each side until it’s heated thru and toasted to your liking.
Serve with a sprinkle of cinnamon, your favorite syrup, maybe even a dollop of whipped cream!
