A low-calorie breakfast item. It can be made with many different fruits.
Mix together all of the ingredients except for the pineapple bits.
Spray an 8×8 pan with cooking spray and spread the pineapple on the bottom of the pan. Pour the mix over the pineapple.
Bake at 350 for 30 to 35 minutes.
I have also made this using other fruits. My current favorite is canned pears (diced) and the reserved pear juice. You can also incorporate the fruit directly into the mix if you like.
