This is nutritious, but more importantly, delicious! Your kids will love it! My favorite way to eat it is parfait style with vanilla or sweetened plain yogurt, topped with fresh berries.
In a very large bowl, mix the oatmeal, wheat germ, brown sugar, coconut and nuts. In a medium saucepan, mix the water, honey, peanut butter, and oil. Bring to a boil and cook for 1 minute. Add the vanilla and then pour over the dry ingredients. Stir until everything is moist and then pour half the mixture onto a baking sheet and spread until in a level layer. Repeat with the remaining mixture on another sheet. Put in a 200 degree oven for 1 hour. Switch the position of the baking sheets and cook for another hour. Remove from the oven and pour into a large airtight container.
Stir in the craisins at this point. Or you may want to leave them out and add as you eat; the craisins tend to dry out a little and I don’t mind, but some may.
