My mom’s super-easy recipe
Preheat griddle to 375 degrees.
In a medium bowl, melt butter in the microwave. Dump both cups of flour on top. Be SURE that it’s self-rising flour. Add eggs and vanilla on top of flour. Whisk in buttermilk. You’ll probably need more to make it runny enough. You’ll know when you’ve got enough buttermilk when you lift your whisk, and big, thick drips fall off into the bowl. Don’t let it get too runny!
Using a 1/2 cup, pour batter onto griddle. When bubbles start to pop through the top, it’s time to turn them over. Let them cook for about 3 more minutes on the other side. Serve with butter and syrup.

How much is 1/3 gallon flour? In the recipe you said dump BOTH cups of flour. Please clear this up for me. I love vanilla in my pancakes, have always added it. Thanks for the recipe, they look yummmmmmy. I love the thicker fluffier pancakes and these look like they fill the bill.

I failed to mention in my above review that these remind me of McDonalds hotcakes; except these are much better. Thanks for a superb recipe. I have made them many times since I first reviewed them.

OMG ….how flavorful are these pancakes. I have tried many homemade pancake recipes without much success, but these were right on… absolutely WONDERFUL. I didn’t mean to shout but sometimes you have to get your point across. Definately made it to my personal recipe box. Thanks so much for sharing a great recipe. LOVE these pancakes!!!!

Hey, Colleen….these are EXCELLENT and incredibly easy…TFS! =) I used closer to 2 cups of buttermilk…and the second time I made them, I forgot the butter and they turned out just as delicious. My husband and kids have all made it clear that they would like these again…SOON.
