Russian pancakes (Blini) are one of the most traditional Russian dishes. They can be either savory (caviar, salmon) or sweet (jam)!
Using a mixer, beat together milk, eggs and salt. Beat in flour.
Butter a skillet over the heat. Keep in mind that the size of your Russian pancakes depends on the size of your skillet. Pick the skillet up off the heat and pour in a ladleful of batter, tilting and rotating the pan to spread it evenly. Return the pan back to the heat. Fry until edges of the pancake look crisp. Flip it over and fry for 1 minute on the other side. Repeat with the remaining batter.
Top with any combination you like: salmon and dill, caviar and sour cream or simply with jam!
