Mom used to make these pancakes on Saturday mornings. In my opinion, they’re the best ever.
Mix ingredients in the order given, mixing well between each item. The batter will be thick. Let stand for 15 minutes before cooking.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
FOR WAFFLES:
Separate the eggs. Beat the whites until stiff and fold in as the last ingredient. Spray preheated waffle iron with nonstick cooking spray. Pour mix onto the hot waffle iron. Cook until golden; serve hot.

Very tasty and easy. I made the waffle version. I usually like a crisp waffle and these are softer but they still had a good flavor.
