Delicious and easy-to-make sour cream pancakes.
Preheat a skillet over medium heat.
Separate the egg yolk from the white. Put the yolk into a medium sized bowl. Whisk the yolk with the melted butter. Whisk in the sour cream and honey and set aside. Combine the dry ingredients (flour through salt on the above list) in another bowl.
With a hand mixer, whip the egg white until stiff peaks are formed.
Combine the egg yolk mixture with the dry ingredients. Add the milk. Stir until just incorporated. Fold in the whipped egg whites.
Spray your hot pan with non-stick cooking spray. Use a ¼” cup measuring cup and pour pancake mixture onto the hot pan. Top with banana slices (optional). Cook until golden brown on the bottom side. Then flip it over and cook the other side until golden. Remove the cooked pancakes from the pan and repeat with the remaining batter. Serve immediately.
