Description

A rich, healthy, chocolaty pancake popover topped with mini marshmallows and crushed cereal.

Ingredients

  • 1 Tablespoon Kashi Heart To Heart Honey Toasted Cereal
  • ½ cups Greek Yogurt, Plain Or Vanilla Flavor
  • 2 whole Egg Whites
  • ½ teaspoons Vanilla Extract (omit If Using Vanilla Yogurt)
  • ⅓ cups White Whole Wheat Flour
  • 2 Tablespoons Unsweetened Cocoa Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Stevia Or 1 Teaspoon Sugar
  • ⅛ teaspoons Salt
  • 2 Tablespoons Jet Puffed Mini Marshmallow Bites

Preparation

Preheat oven to 350ºF. Spray muffin pan with cooking spray.

Place the Kashi cereal in a sandwich baggie and crush with a rolling pin until crumbs; set aside.

In a blender, add Greek yogurt, egg whites, vanilla extract, flour, cocoa powder, baking soda, sugar and salt. Process until smooth.

Pour pancake batter in the muffin pan and evenly sprinkle mini marshmallows over batter. Top with Kashi cereal.

Cook for about 11-15 minutes until slightly puffed and set.
