These pancakes are a delicious and healthy way to start your day.
In a food processor or blender, combine all of the ingredients. Pulse until well-mixed.
Preheat griddle and coat with nonstick spray. Using 1/4 cup of batter per pancake, cook pancakes until bubbles start to appear. Flip and cook for a few more minutes, checking regularly to make sure they don’t burn.
Serve with your favorite toppings.
