Here is my family’s favorite pancake recipe. It is quick and easy and great for last minute breakfasts. I have converted many from using packaged mixes and I hope you’ll give these a try.
Mix all dry ingredients in a big bowl. Mix all wet ingredients in another. Add the two bowls together. Let it sit for 5 minutes.
Meanwhile heat a non stick skillet (if you don’t use non stick, add 1/3 cup of oil to the batter) on medium heat. If you want to make it even easier mix all ingredients in a blender. That was my mom’s quick and easy trick.
Fry up the pancakes and devour!

This is a great basic recipe! I doubled the recipe and used half white (ap) flour and half sprouted wheat flour. I used a little extra sugar since we don’t use syrup and I subbed coconut milk for the regular dairy milk due to allergies. I also added 2/3 cup of oil since the wheat flour can be dry and some cinnamon. The result was light, fluffy and yummy!

Very good recipe. Made a double batch of blueberry pancakes to freeze. Yum !

Yummy yummy yummy! And super easy! We had them last night for dinner (who doesn’t love breakfast for dinner every once in a while), and about three bites in, my husband declared the recipe a keeper. I will admit that I tweaked the recipe a bit- I used half all purpose flour and half whole wheat, and substituted brown sugar for the white. These will be my go to pancakes from now on!
