These tasty pancakes pack a healthy punch!
Pulse oats in a food processor or blender until you have a moderately fine crumb. Add cottage cheese, egg whites and cinnamon and pulse until blended.
Scoop spoonfulls of desired size onto a lightly oiled, heated skillet/griddle over medium heat. As the top of the pancakes start to bubble, flip to other side and cook until lightly browned on second side and cooked through.
These are great with maple or fruit syrup, or just plain fresh fruit if you’re keeping it super healthy!
