Healthy, easy, go-to breakfast. The pancake itself is considered diet-friendly but add the peanut butter and granola for some good, healthy, filling fat.
In a small bowl mix together bran, yogurt and sugar with a fork until combined. In a separate small bowl, beat the egg white with a fork until foamy. Pour the foamy egg white into the bran mixture and combine well. In the meantime, heat a non-stick skillet on medium-low to medium heat and cook the pancake for about 5 minutes on each side. Plate up and smear with peanut butter, then sprinkle with granola.
