Breakfast the Norwegian way.
Spray a skillet with cooking spray (Pam or whatever) and preheat on medium/low heat.
Put eggs in large bowl and beat with whisk. Add salt and baking soda and beat well. Add 1/4 cup of flour, then add 1/4 cup of milk – alternating until gone. Stir well.
When pan is hot, ladle in small amounts of batter and flip pancake after 5-10 seconds. Fold the finished pancakes into triangles. Serve with powdered sugar and fresh blueberries or strawberries.
