These pancakes have changed my opinion of pancakes in general. We have them at least twice a month! I’ve added blueberries, chocolate chips and even food coloring to liven them up!
In a large bowl, sift together the flour, baking powder, salt and sugar. In another bowl, melt the butter and mix in the milk, egg and vanilla extract. Beat the wet ingredients into the dry ingredients.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
