A quick and easy breakfast that’s filled with fruit and topped with maple syrup.
1. Preheat a skillet on low/medium heat and lightly grease it with butter or non-stick spray.
2. Mix pancake mix and milk in a bowl and whisk until smooth.
3. Add blueberries and grapes and whisk until smooth.
4. Use a 1/2 cup measuring scoop and pour batter into skillet, leaving space between each pancake.
5. Turn pancakes with a spatula when edges look cooked, after about two to three minutes. Turn only once. Repeat and cook the bottom side until browned to your liking. Remove cooked pancakes to a plate and repeat with the remaining batter.
6. Place pancakes onto plates. Recipe should make 3 mini pancakes each. A add maple syrup and butter if desired.
7. Enjoy!
