These are fabulous pancakes! Full of good-for-you ingredients but still fluffy and with an amazing texture. Prepare the mix ahead of time and store in an airtight container and you can whip up breakfast in a flash!
Mix ingredients together in a bowl. Mixture will thicken slightly as it sits.
Heat a non-stick griddle over medium to medium-high heat and add a pat or two of butter. Dollop batter onto the skillet in your preferred size pancakes, leaving space between them. Cook until both sides are golden and cooked through. Serve with jam.
